Method
- Step 1: Rinse the adzuki beans under cold water and drain them well.
- Step 2: In a pot, combine the rinsed beans and 3 cups of water. Bring it to a boil over medium heat.
- Step 3: Once boiling, reduce the heat to low and let it simmer for about 1 hour or until the beans are tender.
- Step 4: Drain the beans, but keep some of the cooking liquid if you find your paste needs a little adjustment later.
- Step 5: Return the beans to the pot and add the sugar and salt. Cook over low heat, stirring frequently, until the mixture thickens and the sugar dissolves (this should take about 5-10 minutes).
- Step 6: For a smoother texture, you can mash the beans with a fork or blend them in a food processor until you reach your desired consistency.
- Step 7: Allow the anko to cool before using it or storing it in an airtight container in the refrigerator.
Notes
Anko can be made in advance and stored in the fridge for up to a week, or you can freeze it for longer storage!
