For the Azuki Beans
  • 1 cup dried azuki beans
  • 4 cups water
  • 1/4 teaspoon salt optional

Method
 

  1. Step 1: Start by rinsing the dried azuki beans under cold water to remove any impurities or debris.
  2. Step 2: In a large pot, combine the rinsed beans and water. Bring everything to a boil over medium-high heat.
  3. Step 3: Once boiling, reduce the heat to low and cover the pot. Let it simmer for 45 minutes to 1 hour, or until the beans are tender.
  4. Step 4: If desired, add salt during the last 10 minutes of cooking to let the flavor soak in.
  5. Step 5: Once they’re done, drain any excess water and serve as desired.

Notes

Store cooked azuki beans in an airtight container in the refrigerator for up to 5 days. Freeze portions for longer storage.
