Ingredients
  

For the Azuki Red Bean Ice Cream
  • 1 cup azuki beans
  • 3 cups water
  • 1 cup granulated sugar
  • 1 cup heavy cream
  • 1 cup whole milk
  • 1 teaspoon vanilla extract
  • 1 pinch salt

Method
 

  1. Step 1: Start by rinsing the azuki beans under cold water. In a medium pot, combine the beans and water. Bring to a boil, then reduce the heat and let it simmer for about 1 hour, or until the beans are tender. Trust me, the aroma will be wonderful!
  2. Step 2: Once the beans are done, drain them and return to the pot. Add the sugar and a pinch of salt, stirring over low heat until the sugar dissolves. Remove from heat and let the mixture cool.
  3. Step 3: In a separate bowl, whisk together the heavy cream, whole milk, and vanilla extract until well combined.
  4. Step 4: Once the bean mixture has cooled, blend it until smooth. Combine the blended bean mixture with the cream mixture and stir until everything is well mixed.
  5. Step 5: Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency.
  6. Step 6: Transfer the ice cream to an airtight container and freeze for at least 4 hours or until it’s nice and firm.
