Ingredients
  

For the Chicken Chashu
  • 1 lb chicken thighs boneless and skinless
  • 1/4 cup soy sauce
  • 1/4 cup mirin
  • 2 tbsp sake
  • 2 tbsp sugar
  • 2 cloves garlic smashed
  • 1 inch ginger sliced
  • 2 stalks green onions cut into large pieces

Method
 

  1. Step 1: In a pot, combine soy sauce, mirin, sake, sugar, garlic, ginger, and green onions. Bring the mixture to a simmer over medium heat. The aromas will start to fill your kitchen!
  2. Step 2: Add the chicken thighs to the pot, ensuring they are fully submerged in the liquid.
  3. Step 3: Cover the pot and simmer for 30 minutes, turning the chicken occasionally to ensure even cooking.
  4. Step 4: After 30 minutes, remove the lid and continue to simmer for an additional 15 minutes, allowing the sauce to reduce slightly.
  5. Step 5: Once cooked, remove the chicken from the pot and let it cool for a few minutes.
  6. Step 6: Slice the chicken into thin pieces and serve with the reduced sauce drizzled over the top. Enjoy the beautiful presentation!

Notes

This dish stores wonderfully! You can keep leftover Chicken Chashu in an airtight container in the fridge for up to 3 days. To reheat, simply warm it gently on the stove or in the microwave. If you want to enjoy it later, it can also be frozen for up to a month—just make sure to store it in a freezer-safe container!
