  • 1 tsp almond extract optional; adds depth of flavor
  • 1 tsp cream of tartar stabilizes egg whites for perfect peaks

Method
 

  1. Step 1: Preheat your oven to 325°F (160°C). Do not grease the cake pan; this helps the cake cling to the sides for a better rise.
  2. Step 2: In a large mixing bowl, sift together the flour, sugar, baking powder, and salt.
  3. Step 3: In another bowl, whisk together the oil, egg yolks, water, vanilla extract, and almond extract until well combined.
  4. Step 4: Gradually add the wet ingredients to the dry ingredients, mixing until smooth and fully incorporated.
  5. Step 5: In a separate bowl, beat the egg whites with cream of tartar until stiff peaks form.
  6. Step 6: Gently fold the beaten egg whites into the batter in three additions.
  7. Step 7: Pour the batter into an ungreased 10-inch tube pan, ensuring even distribution.
  8. Step 8: Bake for 55 to 60 minutes, or until a toothpick inserted into the center comes out clean.
  9. Step 9: Once baked, invert the pan onto a wire rack and let the cake cool completely before removing it from the pan.

Notes

Store your chiffon cake in an airtight container at room temperature for up to three days. If you want to keep it longer, you can freeze it for up to three months.
