Ingredients
  

For the Clam Pasta
  • 400 g spaghetti or linguine Either pasta works beautifully, but linguine hugs the sauce.
  • 2 tbsp olive oil This adds a lovely richness and depth of flavor.
  • 4 cloves garlic minced
  • 1 tsp red pepper flakes Adjust to your desired heat level.
  • 400 g chopped tomatoes They add a nice acidity and balance to the dish.
  • 1 cup white wine Choose a dry white wine for the best flavor.
  • 1 kg fresh clams Fresh clams are key to achieving that ocean-fresh taste.

Method
 

  1. Step 1: Start by cooking the spaghetti or linguine according to package instructions until al dente. Drain and set aside.
  2. Step 2: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes, sautéing until fragrant, about 1 minute.
  3. Step 3: Add the chopped tomatoes and white wine to the skillet. Bring to a simmer and let it cook for 5 minutes.
  4. Step 4: Next, add the cleaned clams to the skillet, cover, and cook until the clams open up, about 5-7 minutes. Remember to discard any clams that do not open.
  5. Step 5: Season the sauce with salt and pepper to taste, allowing all those wonderful flavors to blend together.
  6. Step 6: Toss the cooked pasta with the clam sauce until everything is well combined.
  7. Step 7: Serve hot, garnished with chopped parsley and a sprinkle of grated Parmesan cheese if you like.

Notes

If you have leftovers, store them in an airtight container in the fridge for up to 2 days. Reheat gently on the stove with a splash of water or wine to bring back that lovely sauce.
