- Step 1: In a large pot, heat the olive oil or butter over medium heat. Add the chopped onion and sliced leeks, and sauté until softened, about 5-7 minutes.
- Step 2: Add the diced potatoes to the pot and pour in the broth. Bring to a boil, then reduce the heat and simmer until the potatoes are tender, about 15-20 minutes.
- Step 3: Use an immersion blender to puree the soup until smooth. Alternatively, transfer the soup in batches to a blender and blend until smooth.
- Step 4: If desired, stir in the heavy cream and season with salt and pepper to taste. Heat through.
- Step 5: Serve hot, garnished with fresh chives or parsley, if desired.
Notes
Store your potato leek soup in an airtight container in the fridge for up to 4 days. You can also freeze it for up to 3 months—just let it cool completely before transferring it to a freezer-safe container.
