Ingredients
  

For the Cioppino
  • 2 tbsp olive oil for sautéing and adding rich flavor
  • 1 onion, chopped a base for your aromatic foundation
  • 4 cloves garlic, minced because who doesn’t love garlic?
  • 1 medium bell pepper, chopped adds a pop of color and sweetness
  • 14 oz diced tomatoes, canned the heart of the stew
  • 1 cup fish stock for a deeper seafood flavor
  • 1 cup dry white wine enhances the richness of the dish
  • 1 tsp dried oregano a classic herb that complements seafood
  • 1 tsp red pepper flakes for a little kick!
  • 1 lb shrimp, peeled and deveined succulent and tasty
  • 1 lb mussels, cleaned adds a beautiful presentation
  • 1 lb clams, cleaned for that authentic seafood experience
  • 1 lb firm white fish, cut into chunks I love using cod or halibut
For Serving
  • 1 bunch fresh parsley, chopped adds freshness
  • 1 loaf crusty bread perfect for soaking up that delicious broth

Method
 

  1. Step 1: In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
  2. Step 2: Stir in the minced garlic and chopped bell pepper; cook for an additional 3 minutes until fragrant.
  3. Step 3: Add the diced tomatoes, fish stock, white wine, oregano, red pepper flakes, salt, and black pepper. Bring the mixture to a boil, then reduce heat and let it simmer for 30 minutes to blend those lovely flavors.
  4. Step 4: Now it’s time to add the shrimp, mussels, clams, and chunks of white fish. Cover the pot and cook for about 10-15 minutes, or until the seafood is cooked through and the mussels and clams have opened up.
  5. Step 5: Remove from heat and garnish with fresh parsley. Serve hot with slices of crusty bread for the ultimate experience!

Notes

If you have leftovers (which is rare because it’s so good!), let it cool completely before transferring to an airtight container. It can be stored in the fridge for about 2-3 days. You can also freeze it for up to 2 months, just be aware that the texture of the seafood may change slightly upon reheating.
