  • 8 cups dashi broth or water
  • 1 lb thinly sliced beef e.g., ribeye or sirloin
  • 1 cup napa cabbage chopped
  • 1 cup shiitake mushrooms sliced
  • 1 cup enoki mushrooms trimmed
  • 1 cup tofu cut into cubes
  • 1 cup carrots thinly sliced
  • 1 cup green onions chopped
  • 1 cup daikon radish thinly sliced
For Dipping Sauces
  • Soy sauce
  • Sesame sauce
  • Chili sauce

Method
 

  1. Step 1: In a large pot, bring the dashi broth (or water) to a gentle simmer over medium heat.
  2. Step 2: While the broth is heating up, arrange the sliced beef, vegetables, and tofu on a large platter.
  3. Step 3: Once the broth is simmering, use chopsticks to dip the beef slices into the broth for about 10-15 seconds until cooked to your liking.
  4. Step 4: Add the vegetables and tofu to the broth, cooking until they are tender. This usually takes just a few minutes.
  5. Step 5: Serve the cooked ingredients with small bowls of soy sauce, sesame sauce, and chili sauce for dipping.
  6. Step 6: Repeat the process, adding more ingredients to the broth as desired. Enjoy the communal experience!

Notes

If you have leftovers, allow the broth and ingredients to cool completely before transferring to airtight containers. Store in the refrigerator for up to 2 days.
