For the Shio Ramen

  • 2 tbsp soy sauce A classic ingredient that enhances the umami taste.

  • 2 servings ramen noodles Choose your favorite type; fresh or dried work well.
  • 2 soft-boiled eggs halved The creamy yolk is an essential topping.
  • 1 cup sliced green onions Fresh and vibrant, they add great crunch.
  • 1 cup sliced cooked pork belly (chashu) This rich topping is a must-have for authentic ramen.
  • Nori sheets (seaweed), for garnish
  • Bean sprouts, for garnish

Method
 

  1. Step 1: In a large pot, combine the chicken broth and water. Bring to a simmer over medium heat.
  2. Step 2: Add the shio, soy sauce, and mirin to the broth. Stir until the salt is fully dissolved.
  3. Step 3: Cook the ramen noodles according to the package instructions. Drain and set aside.
  4. Step 4: Divide the cooked noodles into bowls. Ladle the hot broth over the noodles.
  5. Step 5: Top each bowl with soft-boiled egg halves, sliced pork belly, green onions, nori sheets, and bean sprouts.

Notes

If you have leftovers, store the broth and noodles separately in airtight containers. The broth can last up to 3 days in the fridge, while the noodles are best eaten within 1-2 days to maintain their texture. Reheat the broth gently and cook fresh noodles when you're ready to enjoy your ramen again!
