- Step 1: In a large pot, combine the vegetable broth and water. Bring to a boil over medium-high heat.
- Step 2: Add the ramen noodles and cook according to package instructions. Once cooked, drain and set aside.
- Step 3: In the same pot, heat the sesame oil over medium heat. Add the minced garlic and grated ginger, sautéing until fragrant, about 1 minute.
- Step 4: Add the sliced mushrooms, bok choy, and julienned carrot to the pot. Cook for about 5 minutes until the vegetables are tender.
- Step 5: Stir in the soy sauce and miso paste, mixing until well combined.
- Step 6: Return the cooked ramen noodles to the pot, stirring to combine with the broth and vegetables.
- Step 7: Serve hot, garnished with sliced green onions, a boiled egg if desired, and a sprinkle of sesame seeds.
Notes
Store in an airtight container in the fridge for up to 3 days. Keep the broth and noodles separate if possible to prevent mushiness.
