Ingredients
  

For the Ramen
  • 4 cups vegetable broth homemade or store-bought
  • 2 cups water
  • 2 packs ramen noodles discard seasoning packets
  • 1 tbsp soy sauce
  • 1 tbsp miso paste
  • 1 tbsp sesame oil
  • 2 cloves garlic minced
  • 1 inch ginger grated
  • 1 cup mushrooms sliced
  • 1 cup bok choy chopped
  • 1 carrot julienned
  • 1 green onion sliced
  • 1 boiled egg optional for protein boost
For Garnish
  • sesame seeds

Method
 

  1. Step 1: In a large pot, combine the vegetable broth and water. Bring to a boil over medium-high heat.
  2. Step 2: Add the ramen noodles and cook according to package instructions. Once cooked, drain and set aside.
  3. Step 3: In the same pot, heat the sesame oil over medium heat. Add the minced garlic and grated ginger, sautéing until fragrant, about 1 minute.
  4. Step 4: Add the sliced mushrooms, bok choy, and julienned carrot to the pot. Cook for about 5 minutes until the vegetables are tender.
  5. Step 5: Stir in the soy sauce and miso paste, mixing until well combined.
  6. Step 6: Return the cooked ramen noodles to the pot, stirring to combine with the broth and vegetables.
  7. Step 7: Serve hot, garnished with sliced green onions, a boiled egg if desired, and a sprinkle of sesame seeds.

Notes

Store in an airtight container in the fridge for up to 3 days. Keep the broth and noodles separate if possible to prevent mushiness.
