Method
 

  1. Step 1: In a mixing bowl, whisk together the flour, cold water, egg, baking soda, and salt until just combined. Remember, a few lumps are okay; overmixing can lead to a tough batter!
  2. Step 2: Prepare your vegetables and seafood by cutting them into bite-sized pieces. This ensures even cooking.
  3. Step 3: Heat oil in a deep frying pan or pot to 350°F (175°C). You can test the oil by dropping in a bit of batter; it should sizzle and rise to the top.
  4. Step 4: Dip the vegetables and seafood into the batter, letting any excess drip off. You want a light coating, not too thick!
  5. Step 5: Carefully place the battered items into the hot oil, frying in small batches to avoid overcrowding.
  6. Step 6: Fry until golden brown and crispy, about 2-3 minutes. Use a slotted spoon to remove them from the oil, and let them drain on paper towels.

Notes

Tempura is best enjoyed fresh, but you can store leftovers in an airtight container in the fridge for up to 2 days. To reheat, pop them in the oven to regain some crispiness.
