- Step 1: In a medium saucepan, combine the heavy cream, whole milk, and half of the sugar (3/8 cup). Heat over medium heat until warm but not boiling.
- Step 2: In a separate bowl, whisk together the egg yolks, remaining sugar (3/8 cup), matcha powder, vanilla extract, and salt until well combined.
- Step 3: Slowly pour the warm cream mixture into the egg yolk mixture, whisking constantly to temper the yolks.
- Step 4: Return the combined mixture to the saucepan and cook over medium-low heat, stirring continuously until thickened (about 5-7 minutes).
- Step 5: Remove from heat and strain the mixture through a fine-mesh sieve into a bowl to remove any lumps.
- Step 6: Allow the mixture to cool at room temperature, then cover and refrigerate until chilled (at least 4 hours or overnight).
- Step 7: Once chilled, churn the mixture in an ice cream maker according to the manufacturer's instructions until it reaches a soft-serve consistency.
- Step 8: Transfer the ice cream to an airtight container and freeze for at least 4 hours or until firm.
- Step 9: Serve and enjoy your matcha ice cream!
