Ingredients

For the Matcha Ice Cream Base
  • 2 cups heavy cream This gives the ice cream its rich, creamy texture.
  • 1 cup whole milk For a smooth consistency.
  • 3/4 cup granulated sugar Sweetens the mixture perfectly.
  • 2 tbsp matcha green tea powder The star ingredient that adds flavor and color.
  • 1 tsp vanilla extract A hint of vanilla enhances the overall flavor.
  • 1/4 tsp salt Just a pinch to balance the sweetness.
  • 5 large egg yolks Help create a custard base that's thick and velvety.

Equipment

  • Medium Saucepan
  • Separate Bowl
  • Ice Cream Maker

Method

  1. Step 1: In a medium saucepan, combine the heavy cream, whole milk, and half of the sugar (3/8 cup). Heat over medium heat until warm but not boiling.
  2. Step 2: In a separate bowl, whisk together the egg yolks, remaining sugar (3/8 cup), matcha powder, vanilla extract, and salt until well combined.
  3. Step 3: Slowly pour the warm cream mixture into the egg yolk mixture, whisking constantly to temper the yolks.
  4. Step 4: Return the combined mixture to the saucepan and cook over medium-low heat, stirring continuously until thickened (about 5-7 minutes).
  5. Step 5: Remove from heat and strain the mixture through a fine-mesh sieve into a bowl to remove any lumps.
  6. Step 6: Allow the mixture to cool at room temperature, then cover and refrigerate until chilled (at least 4 hours or overnight).
  7. Step 7: Once chilled, churn the mixture in an ice cream maker according to the manufacturer's instructions until it reaches a soft-serve consistency.
  8. Step 8: Transfer the ice cream to an airtight container and freeze for at least 4 hours or until firm.
  9. Step 9: Serve and enjoy your matcha ice cream!
