- Step 1: Rinse the sushi rice under cold water until the water runs clear. Drain it well to remove excess starch.
- Step 2: In a medium pot, combine the rinsed rice and water. Bring to a boil, then reduce the heat to low, cover, and let it simmer for 20 minutes. Once done, remove from heat and let it sit for another 10 minutes to steam.
- Step 3: In a small bowl, mix together the rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the cooked rice, allowing it to cool to room temperature.
- Step 4: On a bamboo sushi mat, lay a sheet of nori shiny side down. With wet hands, spread a thin layer of sushi rice evenly over the nori, leaving about a 1-inch border at the top.
- Step 5: Arrange a line of julienned cucumber, sliced avocado, and eel along the bottom edge of the rice-covered nori.
- Step 6: Using the bamboo mat, carefully roll the sushi away from you, pressing gently to keep the roll tight. Seal the edge of the nori with a little water.
- Step 7: Slice the roll into 6-8 pieces using a sharp knife. Wiping the knife with a damp cloth between cuts will help ensure clean slices.
- Step 8: Drizzle eel sauce over the top and sprinkle with tempura flakes and sesame seeds for that perfect finish.
- Step 9: Serve with soy sauce, wasabi, and pickled ginger on the side for a complete experience.

Leftover sushi can be stored in an airtight container in the refrigerator for up to 24 hours.
