- Step 1: In a large pot, heat the olive oil over medium heat. Add the diced chicken and cook until browned. Remove the chicken and set aside.
- Step 2: In the same pot, add the chopped onion and sauté until translucent, about 3-4 minutes.
- Step 3: Add the sliced carrots and diced potatoes to the pot. Stir and cook for about 5 minutes, letting the veggies soften a bit.
- Step 4: Pour in the chicken broth and bring to a boil. Reduce the heat and let it simmer until the vegetables are tender, about 15 minutes.
- Step 5: Return the cooked chicken to the pot. Stir in the heavy cream, salt, black pepper, and thyme. Cook for an additional 5 minutes to let all those flavors mingle.
- Step 6: Add the frozen peas and cook for another 2-3 minutes until heated through.
- Step 7: Serve hot, garnished with fresh parsley for that beautiful touch.
Notes
If you have leftovers, let the stew cool completely before transferring it to an airtight container. It will keep in the fridge for about 3-4 days. You can also freeze it for up to 3 months.
