- Step 1: Preheat your oven to 325°F (160°C). Grease and flour a 9-inch loaf pan.
- Step 2: In a bowl, combine the mixed dried fruit and nuts. Toss and set aside.
- Step 3: In another bowl, whisk together the flour, baking powder, cinnamon, nutmeg, and salt.
- Step 4: In a large mixing bowl, cream the softened butter and brown sugar together until light and fluffy.
- Step 5: Beat in the eggs one at a time, then add the vanilla extract and orange juice. Mix until well combined.
- Step 6: Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
- Step 7: Gently fold in the fruit and nut mixture.
- Step 8: Pour the batter into the prepared loaf pan and spread evenly.
- Step 9: Bake for 50-60 minutes, or until a toothpick comes out clean.
- Step 10: Allow to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
Notes
This fruitcake stores well in an airtight container at room temperature for up to a week. For longer storage, freeze it wrapped tightly in plastic wrap and aluminum foil for up to three months.
