- Step 1: In a bowl, combine the sliced pork with soy sauce, oyster sauce, and cornstarch. Mix well and let it marinate for about 15 minutes.
- Step 2: In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the marinated pork and stir-fry until browned and cooked through, about 3-4 minutes. Remove the pork from the skillet and set aside.
- Step 3: In the same skillet, add the minced garlic and ginger. Sauté for about 30 seconds until fragrant.
- Step 4: Add the eggplant and bell pepper to the skillet. Stir-fry for 5-7 minutes, or until the vegetables are tender.
- Step 5: Return the cooked pork to the skillet. Add the water, salt, and pepper, and stir to combine. Cook for an additional 2-3 minutes to heat everything through.
- Step 6: Garnish with chopped green onions before serving.
Notes
Leftovers can be stored in an airtight container in the fridge for up to 3 days. This stir-fry can also be frozen for up to 2 months.
