- Step 1: Preheat your oven to 375°F (190°C).
- Step 2: In a large skillet, heat the olive oil over medium heat. Add the sliced onion and sauté until translucent, about 5-7 minutes.
- Step 3: Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.
- Step 4: Season the chicken breasts with salt, black pepper, thyme, and paprika.
- Step 5: In the skillet, push the onions and garlic to the side and add the seasoned chicken breasts. Brown the chicken on both sides, about 3-4 minutes per side.
- Step 6: Pour the chicken broth into the skillet, then cover and transfer it to the preheated oven.
- Step 7: Bake for 25-30 minutes, or until the chicken is cooked through.
- Step 8: Once done, remove from the oven and let it rest for a few minutes before serving. Garnish with fresh parsley.
Notes
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. To reheat, simply warm them in the oven or microwave. You can also freeze the chicken for up to 2 months.
