Method
- Step 1: Rinse the rice under cold water until the water runs clear. Drain and set aside.
- Step 2: In a medium pot, combine the rinsed rice and water.
- Step 3: Add the sliced burdock root to the pot.
- Step 4: In a small bowl, mix the miso paste, soy sauce, mirin, and sesame oil until smooth. Stir this mixture into the rice and water.
- Step 5: Bring the pot to a boil over medium-high heat. Once boiling, reduce the heat to low, cover, and let it simmer for about 20 minutes or until the rice is cooked and the water is absorbed.
- Step 6: Once done, remove the pot from the heat and let it sit, covered, for an additional 10 minutes.
- Step 7: Fluff the rice with a fork and garnish with chopped green onion before serving.
Notes
Store any leftovers in an airtight container in the fridge for up to 3 days. You can also freeze it for up to a month, but I recommend consuming it fresh for the best flavor and texture.
