- Step 1: In a mixing bowl, combine the glutinous rice flour, matcha green tea powder, and granulated sugar.
- Step 2: Gradually add water to the dry ingredients, stirring until the mixture is smooth and free of lumps.
- Step 3: Transfer the mixture to a microwave-safe dish and cover it with plastic wrap, leaving a small vent for steam to escape.
- Step 4: Microwave the mixture on high for 1 minute. Remove and stir, then cover and microwave for an additional 1 minute. Repeat this process one more time for a total of 3 minutes.
- Step 5: Once cooked, allow the mochi to cool slightly. Dust your work surface with cornstarch to prevent sticking.
- Step 6: Divide the mochi into small portions and flatten each piece into a circle.
- Step 7: Place a small amount of sweet red bean paste in the center of each circle, then carefully fold the edges over to seal the filling inside.
- Step 8: Shape the mochi into a ball and dust with additional cornstarch to prevent sticking.
- Step 9: Repeat the process until all the mochi is filled.
- Step 10: Serve immediately or store in an airtight container.
Notes
Make sure to separate each piece with a layer of parchment paper to prevent sticking when freezing. The mochi can be made and stored in an airtight container for up to 3 days.
