Ingredients
  

For the Sushi Rice
  • 2 cups sushi rice
  • 2.5 cups water
  • 1/3 cup rice vinegar
  • 3 tbsp sugar
  • 1 tsp salt
For the Toppings
  • 1 cup cooked and seasoned fish pink or white fish, like salmon or tuna
  • 1 cup pickled vegetables such as umeboshi or takuan
  • 1 cup assorted sashimi-grade fish for decoration
  • Decorative items

Method
 

  1. Step 1: Rinse the sushi rice under cold water until the water runs clear.
  2. Step 2: In a medium pot, combine the rinsed rice and water. Let it soak for about 30 minutes.
  3. Step 3: Bring the pot to a boil, then reduce the heat to low, cover, and simmer for 18-20 minutes.
  4. Step 4: In a small saucepan, combine the rice vinegar, sugar, and salt over low heat until dissolved.
  5. Step 5: Transfer the cooked rice to a large bowl and gently fold in the vinegar mixture.
  6. Step 6: Allow the rice to cool to room temperature.
  7. Step 7: On a serving platter, layer the sushi rice, topped with the cooked fish and pickled vegetables.
  8. Step 8: Arrange the assorted sashimi-grade fish on top for decoration.
  9. Step 9: Garnish with decorative items like flower petals or small hina dolls.

Notes

Make sure to rinse the rice thoroughly to avoid overly sticky rice. Store leftovers in an airtight container in the fridge for up to 2 days.
