- Step 1: In a large bowl, combine the daikon radish, eggplant, cucumber, and carrots. Sprinkle with salt and mix well. Let it sit for 1-2 hours to release excess moisture.
- Step 2: After the vegetables have released moisture, rinse them under cold water to remove excess salt. Drain well and pat dry with a clean towel.
- Step 3: In a separate saucepan, combine rice vinegar, sugar, soy sauce, grated ginger, sesame seeds, and red pepper flakes. Heat over medium heat, stirring until the sugar dissolves. Remove from heat and let cool.
- Step 4: In a clean jar or airtight container, layer the vegetables and pour the vinegar mixture over them, ensuring they are fully submerged.
- Step 5: Seal the jar and refrigerate for at least 24 hours before using. The pickles can be stored in the refrigerator for up to 2 weeks.
