- Step 1: In the bowl of your stand mixer, combine the glutinous rice flour, water, and granulated sugar.
- Step 2: Attach the paddle attachment and mix on medium speed until the ingredients are well combined and smooth.
- Step 3: Transfer the mixture to a heatproof dish or bowl that fits inside your steamer.
- Step 4: Fill a pot or steamer with water and bring it to a boil. Once boiling, reduce the heat to a simmer.
- Step 5: Place the dish with the mochi mixture into the steamer, cover, and steam for about 25-30 minutes, or until the mixture becomes translucent and sticky.
- Step 6: Carefully remove the dish from the steamer and allow it to cool slightly.
- Step 7: Dust a clean surface with cornstarch or potato starch. Turn the mochi mixture out onto the dusted surface.
- Step 8: Dust your hands with starch and knead the mochi gently for a few minutes until it reaches a smooth consistency.
- Step 9: Divide the mochi into small portions and shape them as desired. Dust with more starch to prevent sticking.
- Step 10: Serve immediately or store in an airtight container at room temperature for up to a few days.
