Ingredients
  

  • Fresh shrimp

  • Pepper
  • Cornstarch
  • Ice water

Method
 

  1. Step 1: Begin by selecting fresh shrimp. Peel and devein the shrimp, ensuring to remove the shell and the intestinal tract.
  2. Step 2: To help the shrimp maintain their shape during cooking, make shallow cuts along the belly of the shrimp. This will prevent curling.
  3. Step 3: Rinse the shrimp under cold water and pat them dry with paper towels.
  4. Step 4: Season the shrimp lightly with salt and pepper to taste.
  5. Step 5: If desired, coat the shrimp lightly with cornstarch to enhance crispiness.
  6. Step 6: Prepare the batter by mixing ice water with flour until smooth. Dip the shrimp into the batter just before frying.
  7. Step 7: Proceed to fry the shrimp in hot oil according to your recipe for tempura or ebi fry.

Notes

If you happen to have leftovers (though I doubt you will!), store them in an airtight container in the refrigerator for up to 2 days. To reheat, try popping them in the oven to keep them crispy!
