- Step 1: Heat the vegetable oil in a large pot over medium heat. Add the chopped onions and sauté until they are translucent.
- Step 2: Add the minced garlic and grated ginger, cooking for an additional minute until fragrant.
- Step 3: Stir in the chicken pieces and cook until they are browned on all sides.
- Step 4: Add the sliced carrots and cubed potatoes, cooking for a few minutes until they begin to soften.
- Step 5: Sprinkle the curry powder over the ingredients, mixing well to coat everything evenly.
- Step 6: Pour in the chicken broth and soy sauce, bringing the mixture to a boil. Reduce the heat to low and let it simmer for 20-25 minutes, or until the chicken and vegetables are tender.
- Step 7: If a thicker consistency is desired, mix the flour with a small amount of water to create a slurry and stir it into the pot. Cook for an additional 5 minutes.
- Step 8: Season with salt and pepper to taste.
- Step 9: Serve the curry over cooked rice and garnish with chopped green onions.
Notes
If you have any leftovers, you can store your curry in an airtight container in the refrigerator for up to 3 days. It also freezes well for up to 3 months, making it a great meal prep option!
