Japanese Summer Festival Foods

Ingredients
  

For Takoyaki
  • 1 cup all-purpose flour
  • 1.5 cups dashi stock
  • 2 large eggs
  • 0.5 cup diced cooked octopus
  • 0.25 cup chopped green onions
  • 0.25 cup pickled ginger
For Yakitori
  • 1 lb chicken thighs cut into bite-sized pieces
  • 0.5 cup soy sauce
  • 0.25 cup sake
  • 0.25 cup mirin
  • 2 tbsp sugar
For Yaki Imo
  • 2 medium sweet potatoes
For Kakigori
  • Syrup
  • Condensed milk

Method
 

  1. Step 1: For Takoyaki, mix the flour, dashi stock, and eggs until smooth. Preheat the takoyaki pan and brush it with oil. Pour the batter into the pan, filling each mold halfway. Add diced octopus, green onions, and pickled ginger. Add more batter to cover the fillings and cook until golden brown, turning with a skewer. Serve with takoyaki sauce, bonito flakes, and aonori on top.
  2. Step 2: For Yakitori, combine the soy sauce, sake, mirin, and sugar in a saucepan. Heat until the sugar dissolves. Thread chicken pieces and green onions onto skewers. Grill the skewers over medium heat, basting with the sauce until cooked through and slightly charred. Serve hot.
  3. Step 3: For Yaki Imo, preheat your oven to 400°F (200°C). Wash and dry the sweet potatoes, poke holes with a fork, wrap in foil, and bake for 45-60 minutes until tender. Sprinkle with salt before serving.
  4. Step 4: For Kakigori, shave ice using a machine or ice shaver to create fine ice flakes. Place the shaved ice in a bowl, drizzle with your favorite syrup, and top with condensed milk if desired. Serve immediately.

Notes

These dishes are best enjoyed fresh, but if you have leftovers, store takoyaki in an airtight container in the refrigerator for up to 2 days. Yakitori can also be refrigerated for a couple of days; reheat on the grill for best results.
