- Step 1: Prepare the sushi rice according to package instructions and let it cool.
- Step 2: In a bowl, combine the soy sauce, sesame oil, rice vinegar, and sugar. Mix well until the sugar dissolves.
- Step 3: Gently fold the assorted vegetables and cubed tofu into the cooled sushi rice.
- Step 4: Lay a sheet of nori on a bamboo sushi mat or a clean surface.
- Step 5: Spread a thin layer of the sushi rice mixture evenly over the nori, leaving a small border at the top.
- Step 6: Roll the nori tightly from the bottom, using the mat to help shape it into a cylinder.
- Step 7: Slice the roll into bite-sized pieces using a sharp knife.
- Step 8: Serve with pickled ginger and wasabi on the side. Enjoy your homemade sushi!
