- Step 1: In a large pot, combine the soy sauce, sake, mirin, water, ginger, and sugar. Stir well to make sure the sugar dissolves completely.
- Step 2: Bring the mixture to a boil over medium heat. The aroma will start to fill your kitchen.
- Step 3: Once boiling, carefully add the kinmedai fish to the pot. Be gentle; we want to keep the fish intact.
- Step 4: Reduce the heat to low and cover the pot. Let it simmer for about 20-25 minutes, basting the fish occasionally with the braising liquid.
- Step 5: After the fish is thoroughly cooked and tender, remove it from the pot and place it on a serving dish.
- Step 6: Strain the braising liquid to remove the ginger and green onions, then return it to the pot and simmer until it thickens slightly.
- Step 7: Pour the reduced sauce over the fish and garnish with shiso leaves if desired.
- Step 8: Serve warm and enjoy the delightful flavors!
