Ingredients

  • 1/2 cup unsalted butter melted and cooled slightly
  • 3/4 cup granulated sugar Sweetness is key.
  • 2 large eggs For structure and moisture.
  • 1 teaspoon vanilla extract A must-have for that warm flavor.
  • 1 tablespoon lemon zest optional
  • Powdered sugar, for dusting

Method
 

  1. Step 1: Preheat your oven to 375°F (190°C). Grease and flour a madeleine pan.
  2. Step 2: In a bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. Step 3: In another bowl, combine the melted butter and granulated sugar. Mix until creamy.
  4. Step 4: Add the eggs one at a time, mixing well after each addition.
  5. Step 5: Stir in the vanilla extract and lemon zest, if using.
  6. Step 6: Gradually fold in the dry ingredients until just combined.
  7. Step 7: Spoon the batter into the prepared madeleine pan, filling each cavity about three-quarters full.
  8. Step 8: Bake for 10-12 minutes, or until the edges are golden brown.
  9. Step 9: Remove from the oven and let them cool in the pan for a few minutes before transferring to a wire rack.
  10. Step 10: Dust with powdered sugar before serving if desired.

Notes

Store your madeleines in an airtight container at room temperature for up to 3 days. You can freeze them for up to a month.
