Method
 

  1. Step 1: Ensure the fish is fresh and well-chilled. Rinse it under cold water and pat it dry with a paper towel.
  2. Step 2: Place the fish on a clean cutting board with the skin side down (if applicable).
  3. Step 3: Observe the direction of the muscle fibers in the fish. This will determine the cutting direction.
  4. Step 4: Hold the knife at a slight angle (about 45 degrees) to the fish. Begin at the tail end, using a smooth, single motion to cut through the flesh, following the grain of the fish. Aim to make slices about 1/4 inch thick, adjusting thickness based on preference.
  5. Step 5: Continue slicing the fish, working your way towards the head while maintaining the angle and pressure for even cuts.
  6. Step 6: Arrange the sliced sashimi on a plate, optionally garnishing with wasabi, pickled ginger, and serving alongside soy sauce.
  7. Step 7: Sashimi is best enjoyed fresh, so serve immediately after cutting.
