Ingredients
  

For the Menma
  • 1 cup dried bamboo shoots Look for them in Asian grocery stores.
  • 2 cups water Needed for soaking and boiling the bamboo shoots.
  • 1/4 cup soy sauce Adds umami flavor.
  • 2 tbsp sugar Balances the saltiness of the soy sauce.
  • 1 tbsp mirin Sweet rice wine.
  • 1 tbsp sake Adds authenticity.
  • 1 tsp sesame oil Adds a nutty aroma.
  • 1 clove garlic minced.
  • 1 tsp ginger minced.
  • 1 green onion chopped for garnish.

Method
 

  1. Step 1: Rinse the dried bamboo shoots under cold water and soak them in water for at least 4 hours or overnight to rehydrate them.
  2. Step 2: Drain the soaked bamboo shoots and cut them into thin strips to maximize their flavor absorption.
  3. Step 3: In a pot, combine the bamboo shoots and 2 cups of water. Bring to a boil, then reduce the heat and simmer for about 30 minutes until they are tender. Drain and set aside.
  4. Step 4: In a separate bowl, mix together the soy sauce, sugar, mirin, sake, sesame oil, garlic, and ginger to create a delicious marinade.
  5. Step 5: In a pan over medium heat, add the cooked bamboo shoots and pour the sauce mixture over them. Stir to combine and coat the bamboo shoots evenly.
  6. Step 6: Cook for an additional 5-10 minutes, allowing the bamboo shoots to absorb the flavors, stirring occasionally.
  7. Step 7: Remove from heat and let cool. Serve garnished with chopped green onions.

Notes

Store your homemade menma in an airtight container in the refrigerator for about a week. Enjoy cold or reheat gently.
