Ingredients
  

For the Miso Butter Cookies
  • 1 cup unsalted butter softened
  • 1/2 cup white miso paste
  • 1 cup granulated sugar
  • 1/2 cup brown sugar packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup chocolate chips optional

Method
 

  1. Step 1: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Step 2: In a mixing bowl, cream together the softened butter, white miso paste, granulated sugar, and brown sugar until smooth and fluffy.
  3. Step 3: Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. Step 4: In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
  5. Step 5: Gradually add the dry ingredients to the wet mixture, mixing until just combined. If desired, fold in the chocolate chips.
  6. Step 6: Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Step 7: Bake for 10-12 minutes or until the edges are lightly golden. Remove from the oven and let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

These cookies are best enjoyed fresh, but you can store them in an airtight container at room temperature for up to a week.
