Ingredients

For the Miso Marinade
  • 2 pieces black cod fillets about 6 ounces each
  • 1/4 cup white miso paste
  • 1/4 cup sake
  • 1/4 cup mirin
  • 2 tbsp sugar helps caramelize the fish

Equipment

  • Bowl
  • Resealable Plastic Bag or Shallow Dish
  • Baking Sheet
  • Parchment Paper

Method

  1. Step 1: In a bowl, combine the miso paste, sake, mirin, and sugar. Mix well until the sugar is dissolved and the marinade is smooth.
  2. Step 2: Place the black cod fillets in a resealable plastic bag or a shallow dish. Pour the miso marinade over the fish, ensuring they are fully coated. Seal the bag or cover the dish and refrigerate for 24 to 48 hours.
  3. Step 3: Preheat the oven to 400°F (200°C).
  4. Step 4: Remove the fish from the marinade, gently wiping off any excess. Place the fillets on a baking sheet lined with parchment paper.
  5. Step 5: Bake in the preheated oven for 10 to 15 minutes or until the fish is cooked through and flakes easily with a fork.
  6. Step 6: Serve the miso cod immediately, garnished as desired.

Notes

If you have leftovers, store them in an airtight container in the refrigerator for up to 2 days. Reheat gently in the oven to avoid drying out the fish.
