Ingredients
  

For the Mizutaki
  • 1 whole chicken cut into pieces
  • 8 cups dashi broth or chicken stock
  • 1/2 cup soy sauce
  • 2 tbsp mirin
  • 1 tbsp sake
  • 1 tbsp salt
  • 1 block tofu cut into cubes
  • 2 cups napa cabbage chopped
  • 1 cup shiitake mushrooms sliced
  • 1 cup enoki mushrooms trimmed
  • 1 cup carrots sliced
  • 1 cup scallions cut into 2-inch pieces
For Serving
  • cooked rice
  • ponzu sauce
  • grated daikon

Method
 

  1. Step 1: In a large pot, combine the dashi broth, soy sauce, mirin, sake, and salt. Bring to a simmer over medium heat.
  2. Step 2: Add the chicken pieces to the pot and cook until they are fully cooked and tender, about 15-20 minutes.
  3. Step 3: Next, add the tofu, napa cabbage, shiitake mushrooms, enoki mushrooms, carrots, and scallions to the pot. Cook for an additional 5-10 minutes, until the vegetables are tender.
  4. Step 4: Serve the hot pot directly from the pot, accompanied by cooked rice. Optional: provide ponzu sauce and grated daikon for dipping.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. To reheat, simply warm it up on the stove, adding a splash of water or broth to keep it from drying out.
