Ingredients

For the Mochi
  • 2 cups glutinous rice (sweet rice) This is the star of the show! It's what gives mochi its signature chewy texture.
  • 1/2 cup water Needed for soaking the rice and creating a smooth consistency.
  • Cornstarch or potato starch Essential for dusting to prevent sticking and for a lovely finish.

Equipment

  • Steamer Basket
  • Cheesecloth
  • Large Bowl

Method

  1. Step 1: Rinse the glutinous rice under cold water until the water runs clear. This step is crucial for removing excess starch.
  2. Step 2: Soak the rice in water for at least 8 hours or overnight.
  3. Step 3: Drain the soaked rice and place it in a steamer basket lined with cheesecloth. Steam the rice for about 30-40 minutes, or until it becomes sticky and translucent.
  4. Step 4: Transfer the rice to a large bowl and allow it to cool slightly. Using a pestle or your hands, mash the rice until it becomes smooth and pliable.
  5. Step 5: Dust a clean surface with cornstarch or potato starch. Take a portion of the mochi mixture and shape it into a ball or any desired form.
  6. Step 6: Dust the finished mochi with more cornstarch or potato starch to prevent sticking. Serve immediately or store in an airtight container.

Notes

To store your delicious mochi, place it in an airtight container at room temperature. It’s best enjoyed fresh but can last for a couple of days.
