Ingredients
  

For the Sanpeijiru
  • 300 g salmon fillet skin removed
  • 3 cups dashi broth
  • 1 medium onion thinly sliced
  • 1 medium carrot sliced
  • 1 cup daikon radish sliced
  • 1 cup mushrooms sliced (shiitake or enoki)
  • 2 green onions chopped for garnish
  • 2 tbsp soy sauce
  • 1 tbsp miso paste
  • Salt
  • Fresh shiso leaves

Method
 

  1. Step 1: In a pot, bring the dashi broth to a boil over medium heat.
  2. Step 2: Add the onion, carrot, and daikon radish to the pot, and simmer for about 5 minutes until the vegetables begin to soften.
  3. Step 3: Carefully add the salmon fillet to the pot, cooking for approximately 5-7 minutes, or until the salmon is cooked through.
  4. Step 4: Stir in the mushrooms and continue to simmer for another 2-3 minutes.
  5. Step 5: In a small bowl, mix the soy sauce and miso paste until smooth, then add it to the pot, stirring to combine.
  6. Step 6: Season with salt to taste and simmer for an additional minute.
  7. Step 7: Remove from heat and garnish with chopped green onions and shiso leaves, if desired.
  8. Step 8: Serve hot and enjoy the warmth of this delightful soup!

Notes

If you have leftovers, store in an airtight container in the refrigerator for up to 2 days. For longer storage, consider freezing the soup, but the texture may change slightly.
