- Step 1: In a saucepan, combine the water and sugar. Heat over medium heat, stirring until the sugar dissolves completely. Remove from heat and let cool.
- Step 2: Add the chopped shiso leaves to the cooled sugar syrup. Let steep for about 10 minutes to infuse the flavor.
- Step 3: Strain the mixture through a fine mesh sieve to remove the shiso leaves.
- Step 4: Stir in the lemon juice and a pinch of salt.
- Step 5: Pour the mixture into a shallow container and place it in the freezer.
- Step 6: After 30 minutes, stir the mixture with a fork to break up any ice crystals. Repeat this process every 30 minutes until the sorbet is fully frozen and has a fluffy texture, about 2-3 hours.
- Step 7: Once ready, scoop into bowls and serve. Enjoy your shiso sorbet!
