Ingredients

For the Shiso Sorbet
  • 1 cup fresh shiso leaves chopped
  • 1 cup water
  • 1 cup granulated sugar
  • 1 tbsp lemon juice
  • 1 pinch salt

Equipment

  • Saucepan
  • Fine Mesh Sieve
  • Shallow Container

Method

  1. Step 1: In a saucepan, combine the water and sugar. Heat over medium heat, stirring until the sugar dissolves completely. Remove from heat and let cool.
  2. Step 2: Add the chopped shiso leaves to the cooled sugar syrup. Let steep for about 10 minutes to infuse the flavor.
  3. Step 3: Strain the mixture through a fine mesh sieve to remove the shiso leaves.
  4. Step 4: Stir in the lemon juice and a pinch of salt.
  5. Step 5: Pour the mixture into a shallow container and place it in the freezer.
  6. Step 6: After 30 minutes, stir the mixture with a fork to break up any ice crystals. Repeat this process every 30 minutes until the sorbet is fully frozen and has a fluffy texture, about 2-3 hours.
  7. Step 7: Once ready, scoop into bowls and serve. Enjoy your shiso sorbet!
