Ingredients
  

For the Simmered Fried Tofu and Greens
  • 1 block firm tofu drained and pressed
  • 2 tbsp vegetable oil
  • 4 cups mixed greens e.g., spinach, bok choy, or kale
  • 2 cloves garlic minced
  • 2 cups vegetable broth
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tsp grated ginger
  • Salt and pepper to taste
  • Cooked rice or noodles, for serving

Method
 

  1. Step 1: Cut the pressed tofu into cubes, about 1-inch each for even cooking.
  2. Step 2: In a large skillet, heat the vegetable oil over medium heat. Once hot, add the tofu cubes and fry until golden brown on all sides, about 5-7 minutes. Remove tofu and set aside.
  3. Step 3: In the same skillet, add the minced garlic and grated ginger. Sauté for about 1 minute until fragrant.
  4. Step 4: Add the mixed greens to the skillet and stir for about 2-3 minutes until wilted.
  5. Step 5: Pour in the vegetable broth and soy sauce, bringing everything to a simmer.
  6. Step 6: Return the fried tofu to the skillet and cook for an additional 5 minutes.
  7. Step 7: Drizzle with sesame oil and season with salt and pepper to taste. Stir gently.
  8. Step 8: Serve hot over cooked rice or noodles.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat with a splash of vegetable broth.
