- Step 1: Cook the soba noodles according to the package instructions. Once done, drain and set aside.
- Step 2: In a large pot, bring the vegetable broth to a simmer over medium heat.

- Step 4: Toss in the sliced mushrooms, bok choy, and julienned carrot. Cook for about 5-7 minutes, until the vegetables are tender.
- Step 5: If you're adding tofu or your choice of protein, add it to the pot and let it heat through.
- Step 6: Divide the cooked soba noodles into serving bowls. Ladle the hot soup and vegetables over the noodles.
- Step 7: Garnish with sliced green onions and fresh cilantro before serving.
Notes
To keep your delicious soup fresh, store it in an airtight container in the fridge. It will last for about 3-4 days. If you know you'll have leftovers, consider storing the noodles separately from the broth to maintain their texture.
