- Step 1: In a mixing bowl, combine the buckwheat flour and all-purpose flour. Mix them well to ensure even distribution.
- Step 2: Gradually add water to the flour mixture, stirring until a dough starts to form.
- Step 3: Knead the dough on a floured surface for about 5-10 minutes until it becomes smooth and elastic.
- Step 4: Wrap the dough in plastic wrap and let it rest for 30 minutes.
- Step 5: Roll out the dough to a thickness of about 1/8 inch.
- Step 6: Cut the rolled dough into thin strips to form your noodles.
- Step 7: Bring a pot of water to a boil and gently add the noodles. Cook for 4-5 minutes or until they are tender.
- Step 8: Drain the noodles and rinse them under cold water to stop the cooking process.
- Step 9: Serve your soba noodles warm or cold, depending on your preference.
Notes
Leftover cooked noodles can be stored in an airtight container in the fridge for up to 3 days. Uncooked dough can be stored in the refrigerator for up to 2 days.
