Ingredients
  

For the Soup
  • 200 g pork belly thinly sliced
  • 200 g bean sprouts
  • 4 cups dashi broth
  • 3 tbsp miso paste
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 2 cloves garlic minced
  • 1 tsp ginger grated
  • 1 small red chili sliced
  • 2 green onions chopped for garnish

Method
 

  1. Step 1: In a pot, heat the sesame oil over medium heat. Add the minced garlic, grated ginger, and sliced red chili. Sauté until fragrant, about 1 minute.
  2. Step 2: Add the sliced pork belly to the pot and cook until browned, stirring occasionally.
  3. Step 3: Pour in the dashi broth and bring to a boil, then reduce the heat.
  4. Step 4: Stir in the miso paste and soy sauce until fully dissolved in the broth.
  5. Step 5: Add the bean sprouts and cook for an additional 2-3 minutes, just until they're tender.
  6. Step 6: Season with salt and pepper to taste.
  7. Step 7: Serve hot, garnished with the chopped green onions for a fresh finish.

Notes

Store leftovers in an airtight container in the refrigerator for about 3 days. Reheat gently on the stove, adding a splash of water or broth if needed.
