- Step 1: Prepare the Meatballs: In a large bowl, combine the ground pork, ground beef, green onions, garlic, ginger, soy sauce, sesame oil, black pepper, salt, egg, and breadcrumbs. Mix until everything is well combined. Form the mixture into small meatballs, about 1 inch in diameter, and set them aside.
- Step 2: Make the Hot Pot Broth: In a large pot, combine the chicken or vegetable broth, ginger, smashed garlic, soy sauce, rice wine, and chili paste if desired. Bring this to a boil, then reduce the heat and let it simmer for about 20 minutes.
- Step 3: Prepare Hot Pot Ingredients: While your broth is simmering, arrange the assorted vegetables, tofu, thinly sliced meats, and noodles on a beautiful platter.
- Step 4: Cook the Meatballs: Gently add the meatballs to the simmering broth and let them cook for about 10-12 minutes, or until they are fully cooked through.
- Step 5: Serve: Transfer the pot to a portable burner or a heatproof serving bowl. Invite your guests to add their choice of vegetables, tofu, meats, and noodles to the broth.
