  • 1 cup taro peeled and diced
  • 1 cup tapioca pearls
  • 4 cups water
  • 1 cup coconut milk
  • 1/2 cup sugar adjust to taste
  • 1 pinch salt to enhance flavors
  • ice optional, for serving

Method
 

  1. Step 1: In a pot, bring 4 cups of water to a boil. Add the tapioca pearls and cook according to package instructions until they become translucent. Drain and rinse under cold water to remove excess starch. Set aside.
  2. Step 2: In a separate pot, steam the diced taro until soft, approximately 15-20 minutes. Once cooked, mash the taro until smooth.
  3. Step 3: In a saucepan, combine the coconut milk, sugar, and a pinch of salt. Heat gently over low heat until the sugar is dissolved.
  4. Step 4: Add the mashed taro to the coconut milk mixture, stirring until well combined.
  5. Step 5: Incorporate the cooked tapioca pearls into the taro and coconut mixture, mixing thoroughly.
  6. Step 6: Serve warm or chilled, over ice if desired. Enjoy!

Notes

This dessert is best enjoyed fresh, but you can store any leftovers in an airtight container in the fridge for up to 2 days.
