Ingredients
  

For the Ume Miso Chicken
  • 4 pieces boneless and skinless chicken thighs a juicy choice that stays tender and flavorful
  • 3 tbsp umeboshi paste adds a tangy kick
  • 2 tbsp miso paste white or yellow, for richness
  • 2 tbsp soy sauce adds umami and saltiness
  • 1 tbsp honey or maple syrup for sweetness
  • 1 tbsp sesame oil for a nutty aroma
  • 1 clove garlic minced
  • 1 tsp fresh ginger grated
For Garnish
  • sesame seeds
  • chopped green onions

Method
 

  1. Step 1: In a bowl, combine the umeboshi paste, miso paste, soy sauce, honey (or maple syrup), sesame oil, minced garlic, and grated ginger. Mix well until smooth.
  2. Step 2: Place the chicken thighs in a shallow dish or a zip-top bag. Pour the marinade over the chicken, ensuring all pieces are well coated. Cover or seal and refrigerate for at least 1 hour, preferably overnight.
  3. Step 3: Preheat your oven to 400°F (200°C).
  4. Step 4: Arrange the marinated chicken thighs on a baking sheet lined with parchment paper.
  5. Step 5: Bake for 25-30 minutes, or until the chicken is cooked through and has a nice glaze.
  6. Step 6: Remove from the oven and let rest for a few minutes. Slice and serve garnished with sesame seeds and chopped green onions.

Notes

For meal prep, you can marinate the chicken and freeze it for later use. Refrigerate leftovers in an airtight container for up to 3 days.
