Method
- Step 1: Rinse the kombu under cold water to remove any dirt or impurities.
- Step 2: In a pot, combine the water, rinsed kombu, and dried shiitake mushrooms.
- Step 3: Let the mixture soak for 30 minutes to 1 hour to allow the flavors to infuse.
- Step 4: Heat the pot over medium heat and carefully remove the kombu just before the water reaches a boil.
- Step 5: Allow the shiitake mushrooms to simmer for an additional 15-20 minutes.
- Step 6: Remove from heat and strain the liquid to remove the mushrooms.
- Step 7: Your dashi is now ready to be used in your recipes.
Notes
Store the dashi in the refrigerator for up to 5 days or freeze it for up to 3 months.
