Ingredients
  

For the Vegetarian Udon
  • 200 g udon noodles thick, chewy noodles
  • 2 tbsp vegetable oil
  • 1 small onion, sliced
  • 2 cloves garlic, minced
  • 1 medium carrot, julienned
  • 1 medium bell pepper, sliced
  • 100 g snap peas
  • 200 g mushrooms, sliced
  • 3 cups vegetable broth
  • 3 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tsp ginger, grated
  • Salt and pepper, to taste
For garnish
  • Chopped green onions
  • Sesame seeds

Method
 

  1. Step 1: Start by cooking the udon noodles according to package instructions. Once done, drain them and set aside.
  2. Step 2: In a large skillet or wok, heat the vegetable oil over medium heat.
  3. Step 3: Add the sliced onion and minced garlic, sautéing until the onion becomes translucent, usually about 3-4 minutes.
  4. Step 4: Toss in the carrot, bell pepper, snap peas, and mushrooms. Stir-fry for about 5-7 minutes until the vegetables are tender yet still vibrant.
  5. Step 5: Pour in the vegetable broth, soy sauce, sesame oil, and grated ginger. Bring everything to a gentle simmer.
  6. Step 6: Add the cooked udon noodles to the skillet, tossing everything together and allowing the noodles to heat through. Season with salt and pepper to taste.
  7. Step 7: Serve hot, garnished with chopped green onions and a sprinkle of sesame seeds. Enjoy every comforting bite!

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat gently in a skillet or microwave, adding a splash of broth or water if needed.
