  • 4 cups dashi broth or vegetable broth
  • 3 tbsp miso paste white or red
  • 1/2 cup tofu cubed
  • 1/4 cup green onions sliced
  • 1/2 cup seaweed (wakame) rehydrated

Method
 

  1. Step 1: In a pot, bring the dashi broth to a gentle simmer over medium heat.
  2. Step 2: In a small bowl, mix the miso paste with a few tablespoons of the hot broth until smooth.
  3. Step 3: Add the miso mixture back into the pot, stirring to combine well.
  4. Step 4: Add the cubed tofu and rehydrated seaweed, along with any optional vegetables.
  5. Step 5: Simmer for an additional 2-3 minutes, ensuring the soup does not boil.
  6. Step 6: Remove from heat and garnish with sliced green onions before serving.

Notes

If you have leftovers, store them in an airtight container in the refrigerator for up to 3 days. Just reheat gently on the stove.
