- Step 1: Rinse the dried shiso leaves under cold water to remove impurities.
- Step 2: Pat the leaves dry with a clean towel.
- Step 3: In a blender, combine dried shiso leaves and salt. Blend until finely ground.
- Step 4: In a small bowl, mix rice vinegar and sugar until dissolved.
- Step 5: Combine shiso mixture with vinegar and sugar mixture. Mix well.
- Step 6: Stir in sesame seeds if using.
- Step 7: Transfer to an airtight container and store in a cool, dry place.

Your homemade Yukari can be stored in an airtight container for up to six months.
