Ingredients
  

For the Yukari Seasoning
  • 1 cup dried shiso leaves the star of the show!
  • 1/2 cup salt helps to preserve the shiso
  • 1/4 cup rice vinegar adds a tangy note
  • 1 tbsp sugar just a hint of sweetness
  • 1 tbsp sesame seeds optional, for crunch

Method
 

  1. Step 1: Rinse the dried shiso leaves under cold water to remove impurities.
  2. Step 2: Pat the leaves dry with a clean towel.
  3. Step 3: In a blender, combine dried shiso leaves and salt. Blend until finely ground.
  4. Step 4: In a small bowl, mix rice vinegar and sugar until dissolved.
  5. Step 5: Combine shiso mixture with vinegar and sugar mixture. Mix well.
  6. Step 6: Stir in sesame seeds if using.
  7. Step 7: Transfer to an airtight container and store in a cool, dry place.

Notes

Your homemade Yukari can be stored in an airtight container for up to six months.
