- Step 1: In a large pot, heat a splash of cooking oil over medium heat. Sauté the chopped onion and minced garlic until they become fragrant and translucent.
- Step 2: Add the oxtail and tripe to the pot. Cook them until they are nicely browned on all sides; this step adds so much flavor!
- Step 3: Pour in the beef broth and bring everything to a boil. Once boiling, reduce the heat and let it simmer for about 2 to 3 hours, or until the meat is tender. It’s worth the wait!
- Step 4: Stir in the peanut butter and ground rice, mixing well to combine. Continue to simmer for an additional 15 minutes; the sauce will start to thicken beautifully.
- Step 5: Add the sliced eggplant and banana heart to the pot. Cook until the vegetables are tender and infused with flavor.
- Step 6: Stir in the fish sauce and season with salt and pepper to taste. Adjust according to your preference.
- Step 7: Finally, add the bok choy or Chinese cabbage and cook for a few more minutes until wilted.
- Step 8: Serve hot with steamed rice for a truly comforting meal!

This dish can be stored in an airtight container in the fridge for up to 3 days. If you want to keep it longer, consider freezing it for up to 2 months. Just remember to thaw it in the fridge overnight before reheating.
