Ingredients
  

For the Kare Kare
  • 2 lb oxtail cut into pieces
  • 0.5 lb tripe cleaned and cut into pieces
  • 0.5 cup peanut butter
  • 0.25 cup ground rice
  • 4 cups beef broth
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 whole eggplant sliced
  • 1 whole banana heart sliced
  • 1 bunch bok choy or Chinese cabbage
  • 2 tbsp fish sauce
  • to taste salt and pepper to taste
  • splash cooking oil for sautéing

Method
 

  1. Step 1: In a large pot, heat a splash of cooking oil over medium heat. Sauté the chopped onion and minced garlic until they become fragrant and translucent.
  2. Step 2: Add the oxtail and tripe to the pot. Cook them until they are nicely browned on all sides; this step adds so much flavor!
  3. Step 3: Pour in the beef broth and bring everything to a boil. Once boiling, reduce the heat and let it simmer for about 2 to 3 hours, or until the meat is tender. It’s worth the wait!
  4. Step 4: Stir in the peanut butter and ground rice, mixing well to combine. Continue to simmer for an additional 15 minutes; the sauce will start to thicken beautifully.
  5. Step 5: Add the sliced eggplant and banana heart to the pot. Cook until the vegetables are tender and infused with flavor.
  6. Step 6: Stir in the fish sauce and season with salt and pepper to taste. Adjust according to your preference.
  7. Step 7: Finally, add the bok choy or Chinese cabbage and cook for a few more minutes until wilted.
  8. Step 8: Serve hot with steamed rice for a truly comforting meal!

Notes

This dish can be stored in an airtight container in the fridge for up to 3 days. If you want to keep it longer, consider freezing it for up to 2 months. Just remember to thaw it in the fridge overnight before reheating.
