Japanese Glass Noodle Soup (Harusame Soup)

Ingredients
  

For the Soup
  • 100 g glass noodles (harusame)
  • 1 tbsp vegetable oil
  • 1 small onion thinly sliced
  • 2 cloves garlic minced
  • 1 medium carrot julienned
  • 1 medium bell pepper thinly sliced
  • 100 g mushrooms sliced
  • 4 cups vegetable or chicken broth the base of your soup
  • 2 tbsp soy sauce for umami richness
  • 1 tbsp mirin adds a hint of sweetness
For Garnish
  • 2 green onions sliced for garnish
  • Fresh cilantro

Method
 

  1. Step 1: Soak the glass noodles in warm water for about 15 minutes, or until softened. Drain and set aside.
  2. Step 2: In a large pot, heat the vegetable oil over medium heat. Add the sliced onion and minced garlic, sautéing until fragrant and translucent.
  3. Step 3: Add the julienned carrot, bell pepper, and sliced mushrooms to the pot. Cook for about 5 minutes until the vegetables are tender.
  4. Step 4: Pour in the vegetable or chicken broth, soy sauce, and mirin. Bring to a boil, then reduce to a simmer.
  5. Step 5: Add the soaked glass noodles to the soup and cook for an additional 3-4 minutes until heated through.
  6. Step 6: Season with salt and pepper to taste.
  7. Step 7: Serve hot, garnished with sliced green onions and fresh cilantro.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days.
